Some of the PDFs with layered options and variety of choices need to be saved directly from Adobe Reader it seems. How do you save those images out to JPG or PNG?

With Adobe Reader, try Edit --> Take a Snapshot and paste it in PS, GIMP or similar.
Not sure it works for all PDFs out there, though.
It might be worth a try printing a new PDF using something like PDFCreator.

Yup, Snapshot is how I would do it in Adobe Reader. Make sure the snapshot resolution in the general settings/preferences is set to the same resolution as the source file (in other words, if the PDF is 300dpi, make sure the snapshot resolution is 300 dpi as well). The actual location of that option varies from version to version a bit.

I don't use adobe software (old pet peeve, it's overly bloated).I print as PDF to get a single layered PDF and import it on GIMP.
