I am interested in the Fold-Flat part mostly. How well does it work and do the models last if you use them every other week? I live in Japan so anyway to save storage is a bonus.

I didn't store them well - they didn't store like the rest of my stuff, and it wasn't all flat folding. Most of the walls ended up warping, and overall, I didn't like the way it constructed. If it was something I wanted to use more, I'd have probably reinforced the walls a lot more, and modded them to break down flatter.

Interesting difference of opinion here from two people I respect. Did you do any modding oldschooldm or do you use them "as is?"

They aren't my favorite Fold-Flat technique. They use the foam-core base in a strange way - with a pressure-lock device that is a bit fiddly. As to warping, I don't have a problem because they fit tightly in the cigar box. My fold-flat designs are not - at all - inspired by the Fat Dragon approach, but those of jjensen lightning and mproteau (Paper Realms)
